Pumpkin Chicken Salad
I love salads... doesn't matter the season of the year, a tasty salad always makes me happy! I'm constantly reinventing recipes cause, why just cook if you can create ha ha!... And let me tell you something, this creation was definitely luscious.
150 gr Mixed leaves salad
1 chicken breast
2 cups diced pumpkin
1 tbl spoon sesame seeds
1 tea spoon herbes de Provence
1/4 tea spoon fennel seeds
2 tea spoon your favourite chicken seasoning [ I used one compose with pepper, paprika, celery seed ground, nutmeg, marjoram, oregano, lemon myrtle,parsley and rosemary]
3 tbl spoon of goat cheese crumbs
For the dressing:
Put in the oven preheated 200° the diced pumpkin and sprinkle the herbes de Provence and the fennel seeds [ previously ground in a mortar] around 25 minutes or until cooked with a slight golden&crispy layer. In the meantime, spread in a dish the breadcrumbs, a hint of salt, the chicken seasoning and sesame seeds. In a medium bowl, beat the egg. The breadcrumbs won't adhere well to parts of the chicken that have not been coated with egg mixture, so make sure the chicken is completely coated. Lift the chicken out of the egg mixture, hold it above the bowl for a couple of seconds to allow the excess egg mixture to drip off, and then place the chicken on the breadcrumbs and coated in both sides pressing firmly to adhere better the breadcrumbs to the chicken.
To pan-fry the chicken, heat oil in a heavy-based frying pan over medium-high heat. When the oil is hot, add the chicken in a single layer without overcrowding the pan. Fry until crumbs are golden brown on the first side, and then turn chicken and fry until the chicken is cooked through and golden brown on the second side. Transfer cooked chicken to a plate lined with paper towels to remove excess oil.
Place in a big salad bowl the mixed leaves, diced tomatoes, cucumber, advocado and goat cheese. Dress the salad and stir. Add the chicken fingers, and the pumpkin and stir again so all the ingredients will be coated by the dressing flavours.
