Teriyaki Chicken with Noodles


Today I'm gonna share with all of you a healthy and colourful recipe. It's very easy to prepare and is a good source of vitamins, minerals, proteins and oligoelements. Hope you enjoy it!

4 skinless, boneless chicken breasts or boneless thighs

2 tablespoon peanut oil

1/2 cup sliced red onion

2 cups broccoli florets

2 carrots, julienned

2 cups snow peas

1 cup raw cabbage

2 small capsicum

4 cups fry crunchy noodles

1/4 cup teriyaki sauce

2 tablespoon tahini

Fresh coriander and peanuts or sesame seeds

In a large wok saucepan brown chicken in oil and teriyaki sauce, stirring constantly for 2 minutes.

Add the onion, broccoli, carrots, capsicum, cabbage and peas and continue stirring for 2 more minutes. Add the 2 tbspoon of tahini and mix it up with all the ingredients. Add the noodles, stir them into chicken/vegetable mixture, making sure they are coated with sauce. If you like noodles to be crunchy then sprinkle splitting them into smaller pieces, mix all together and serve. Add some fresh coriander and top with chopped peanuts or sesame seeds
